We begin with this warm Shrimp Tartare, a delicate dish full of nuance that beautifully combines the sea’s freshness with premium-quality ingredients. Ingredients (Serves 4)

  • 400 g raw, peeled shrimps
  • La Flor de Málaga Extra Virgin Olive Oil
  • Sabor del Sur olives (to taste, green or marinated)
  • Didilo Black Peppercorn Grinder (150 g PET mill)
  • Didilo Natural Flake Salt Grinder (150 g PET mill)
  • ½ ripe avocado
  • Lemon zest
  • Juice of half a lemon
  • Chives or fresh mint for garnish (optional)

Preparation

  1. Preparing the Shrimps
    Start by chopping the shrimps into small, uniform pieces. For a slightly different and pleasant mouthfeel, you can warm them briefly: sauté for just 10 or 15 seconds in a pan with a few drops of La Flor de Málaga olive oil. The goal is to gently warm them, not fully cook them, to preserve their juicy, delicate texture.
  2. Olive Preparation
    Finely chop the Sabor del Sur olives. This ingredient delivers a bold Mediterranean flavour that enhances the dish’s overall profile. Set aside until the final mixing stage.
  3. Mixing the Ingredients


    In a large bowl, combine the chopped shrimps, diced avocado, and chopped olives. Add a generous drizzle of La Flor de Málaga Extra Virgin Olive Oil, lemon zest, and a few drops of fresh lemon juice for brightness. Gently stir to marry the flavours without breaking up the components.

  4. Gourmet Seasoning
